As it turns out, perfectly hard-boiled eggs aren't even boiled at all!
Place eggs in pot with enough water to cover. Bring to a boil over medium-high heat. Stir occasionally while heating to help yolks settle into the middle of the egg (for deviled eggs). When water comes to a rolling boil, turn heat off & cover. Let sit for 12 minutes. Drain and put in bowl of ice water, until cooled. Peel. Eggs will have brightly colored yellow yolks and should be perfectly cooked.
